CREAMY COLESLAW 
1 medium-sized cabbage, coarsely chopped, or 12 cups shredded green cabbage
3 carrots, coarsely grated or chopped
2 green bell peppers, seeded and coarsely grated or chopped
1/2 cup sliced scallions

Dressing:

1/3 cup lemon juice
1/2 cup buttermilk
1/4 cup sugar
2 teaspoons vinegar
1 teaspoon dry mustard
1/4 teaspoon cayenne pepper
salt and black pepper to taste
1 can - 8 ounces pineapple chunks in natural juice, drained (optional)

In a large bowl, combine the cabbage, carrots, peppers, and scallion. In a medium sized bowl, whisk together all the dressing ingredients. Pour the dressing over the cabbage mixture, add pineapple, and toss to coat. Chill for at least 1 hour.
