FAMOUS BRAN MUFFINS | |
2 c. whole wheat flour 1 1/2 c. wheat bran 1 1/2 c. oat bran 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. ginger 2 eggs 2 c. milk 1 c. honey (more to increase sweetness) 1/3 c. molasses 1/2 c. walnuts (or raisins) 1/2 c. cooking oil 1 tbsp. vanilla extract Mix all dry ingredients; add milk, eggs, honey, molasses and oil; spoon mixture into muffin cups. Bake at 325 to 350 degrees for about 20 minutes. Do not overcook. Makes about two dozen muffins. They can be frozen and microwaved. |
