REFRIGERATOR BRAN MUFFINS 
1 (15 oz.) box wheat bran flakes (8 c.)
3 c. whole wheat flour
2 c. all-purpose white flour
3 c. honey
6 tsp. baking soda
3 tsp. salt
4 eggs, beaten
1 qt. buttermilk
1 c. safflower oil

Combine dry ingredients in large bowl. Make a well in center. Add eggs, buttermilk, oil and honey. Stir to mix in with dry ingredients. Cover and store in refrigerator up to 6 weeks. Bake in 350 degree oven for 20 minutes in greased muffin tins as needed.

Optional: May add sunflower seeds, nuts and/or dried fruit bits or raisins. (Increase calories to 135 per muffin.)
