CRUSTLESS PUMPKIN PIE | |
1/2 c. sugar (or 3/4) 1/2 c. Bisquick 2 tbsp. butter 1 can (13 oz.) evaporated (low fat) milk 2 eggs 1 (16 oz.) can pumpkin 1 tsp. pumpkin pie spice 3 tsp. vanilla (or 2 tsp.) Spray pie plate with Pam. (I use pyrex plate - 10 x 1 1/2 inch) to bake and also serve from. Heat oven to 350 degrees. Beat all ingredients until smooth. (I use electric handbeater.) Pour into plate. Bake 50 to 55 minutes or until knife inserted in center comes out clean. Garnish with dollup of whipped cream, if desired. |
