CRUSTLESS APPLE PIE 
3/4 c. uncooked quick oats
3/4 c. sugar
1/4 tsp. salt
1/4 c. brown sugar, firmly packed
1/4 c. sifted all purpose flour
1/2 tsp. each of cinnamon and mace
4 tbsp. butter (melted)
6 c. thinly sliced apples
1/3 c. orange juice (fresh or frozen)

Mix first 6 ingredients with melted butter. Mixture will be crumbly. Set aside. Slice apples into buttered 8 x 8 (2 inch) deep pan. Top with crumbly mixture. Drizzle orange juice over top.

Bake in a moderate 350 degree oven for about 45 minutes or until apples are tender to a knife touch. Serve warm or cold. May be served with whipped cream, ice cream or a wedge of nippy cheese.

This was a great recipe and my family loved it!! I made extra crumb topping and mixed some in between the apples, then applied some to top. I also added nutmeg, allspice and a bourbon vanilla extract (from Trader Joe's). I also got the juice from a real orange. Very flavorful. My picky daughter came back for more! I only had old-fashioned oats and it worked very well. Next time, I'll throw in a little flaxseed. They'll never know. :)

I made this gluten free, substituting GF flour and oats.... I just used the apples I had on hand, so a mixed lot.... I think I would choose apples more purposefully next time.... really good :)

The best apple pie we've ever had! TONS of apples, and it uses a fraction of the flour, butter, and sugar of more traditional pie recipes, and replaces them with delicious (& healthier) oats. We've made it with 7 apples, and more recently with 9 apples, to create veritable apple mountains, before topping with the crumble. The apples melt together and condense by the time the pie's ready, and become an almost apple-saucey base for the oats, sugar & butter, which are a perfect crunchy topping (and we've absent-mindedly forgotten the brown sugar, and it hasn't made it any worse). We add chopped nuts to the crumble too (almonds, so far). Our juice comes only from fresh-squeezed citrus (we're in Greece, after all), and we add a little lemon juice to the orange (or clementine) juice for an extra kick, and pour a little on the apples before spreading the crumble on top, which helps the apples meld together. Goes great with homemade whipped cream (whipped with some finely-chopped orange zest, juice, and vanilla extract), and of course, ice cream. Thanks for this great recipe!

Tried it. Loved it. I hate crusts on pies, I don't care home much butter one uses. It was a bit sweet for me but that was probably the apples I was using. They came from my bro's backyard tree so I can't say what they are. If I get similarly sweet apples when I try it again I'll cut back a little on the sugar. Probably don't need to if you use Granny Smiths.
