SPICED-UP VEGETABLES 
1 can Contadina ready diced tomatoes
1 (16 oz.) frozen broccoli-cauliflower mix
1 (8 oz.) whole mushrooms or 4 oz. sliced
1 c. diced provolone cheese

Let tomatoes simmer in skillet while steaming broccoli, cauliflower and mushrooms until desired doneness. Drain vegetables and add to the tomatoes. Stir lightly and let simmer for 10 minutes. Add cheese and cover until cheese melts slightly. This dish is great as a side dish or serve over favorite pasta as a main course.
