BULGAR
 
3/4 c. bulgar
2 tbsp. soy grits
1/2 tsp. salt

Mix and cook together. doesn't burn) use vegetable oil if you prefer 1 tsp. ground coriander 1/4 tsp. salt (can omit) 2 scallions, sliced 1 carrot, sliced 1/4-1/2 lb. snow peas 1/2 green pepper, chopped 3/4-1 c. sliced mushrooms

1. In a large frying pan or wok, if you have one, heat the oil with the coriander and salt. Stir fry the vegetables in the order in which they are listed. As soon as one vegetable is coated with oil add the next. The whole process should take less than 5 minutes.

2. Serve the vegetables over the cooked bulgar.

Nutrition Information: The combination of bulgar, soy grits and mushrooms gives 18-19 grams of usable protein.
