CARROT CAKE | |
1 1/2 c. coil 2 c. sugar 4 eggs, well beaten 2 c. flour (self-rising) 2 tsp. cinnamon 1 c. broken pecans 3 c. grated carrots 1/2 c. raisins Mix oil and sugar; beat well. Add eggs. Sift all dry ingredients two or three times. Add nuts. Mix with sugar mixture. Add carrots gradually. Bake at 350 degrees for approximately in loaf or tube pan or 300 to 350 degrees for 30 minutes in three layer pans. CREAM CHEESE ICING: 4 c. powdered sugar 8 oz. pkg. cream cheese, softened 2 tbsp. butter 1 tsp. vanilla In large bowl combine all ingredients; beat until smooth. |
