1 3/4 c. sugar
3 eggs
1 c. vegetable oil
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1 c. chopped nuts
2 c. chopped, pared apples

Take the hassle out of holiday entertaining, make this cake a couple days before -- It's better that way!

Beat sugar, eggs and oil together until well blended. Stir together dry ingredients and fold in apples and nuts. Pour into 9x13 inch pan, and bake at 350 degrees for 60 minutes. Cool, dust with confectionery sugar and serve.
