VEGETABLE CASSEROLE 
1 (16 oz.) can Veg-All, drained
1/3 c. chopped onion
1 c. chopped cheese (American, Velveeta, Cheddar, or any combination)
1 can sliced water chestnuts, drained
1 c. mayonnaise
1 stack Ritz (or similar) crackers
1/4 c. butter

Mix first 5 ingredients. Put into 8x8 inch buttered casserole dish. Crush 1 stack crackers and spread over casserole. Place pats of butter on top of crackers. Bake 40 minutes at 350 degrees.
