PEKING CHICKEN 
1/4 c. brown sugar
1/2 c. soy sauce
1/4 c. sherry
2 cloves garlic
1 tbsp. ginger
1/2 c. chopped green onions
1/4 c. celery
1/4 c. carrots, sliced
1/4 c. mushrooms
1 whole chicken

Skin chicken and split in halves. Mix first 4 ingredients and marinate chicken about 2 hours. Place vegetables in bottom of pan. Place chicken halves over vegetables. Baste at regular intervals. Bake at 350 degrees.

Note: To thicken sauce, add 1 tablespoon cornstarch to liquid in pan. Serve with rice.
