QUICK SAUCY CHICKEN STIR FRY 
3 tbsp. oil
1 c. broccoli flowerets
1 c. cauliflowerets
3/4 c. 2" julienne carrots
1/4 c. green onion slices
3 (approx. 1 lb.) boneless chicken breasts, skinless
1/2 c. Miracle Whip
1 tbsp. soy sauce
1/2 tsp. ground ginger
1/2 tsp. crushed red pepper flakes (opt.)
Hot, cooked minute long grain rice

Heat 1 tablespoon oil in skillet on medium high heat. Add vegetables and garlic. Stir fry 4 to 5 minutes. Remove vegetables from pan. Add remaining oil and chicken to pan and stir fry 4 minutes or until tender. Reduce heat. Stir in vegetables and remaining ingredients. Simmer 1 minute, stirring occasionally. Serve over hot, cooked rice. Sprinkle with red pepper flakes. Serves 4.

Substitute 3/4 pound of shrimp for chicken (reduce final stir fry time from 4 minutes to 2 to 3 minutes or until shrimp are pink).
