LEBANON COUNTY PEACH CAKE 
2 c. sifted flour
3 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1 egg, beaten
1 c. milk
4 fresh peaches, peeled and cut in half
2 tbsp. sugar
1/2 tsp. ground cinnamon

Sift together the first 4 ingredients. Cut in the shortening with pastry blender or 2 knives until mixture resembles coarse cornmeal. Add a mixture of the egg and milk; mix until blended. Pour batter into a well greased (bottom only) 11 x 7 x 1 1/2 inch pan. Cover with peach halves, cut side up, and sprinkle with a mixture of the remaining sugar and cinnamon. Bake at 350 degrees for 35 minutes. Makes 11 x 7 inch cake.
