OAT BRAN PANCAKES | |
1 egg 1 1/4 c. buttermilk 2 tbsp. vegetable oil 1/2 c. flour 1/2 c. oat bran 1/4 c. Miller's bran 1 tbsp. sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt Miller's bran is optional, but it makes for a lighter pancake and adds to the grain flavor. If not used, cut back a little on the buttermilk. Combine flour, brans, salt and sugar. Mix together. In separate bowl combine and mix egg, buttermilk and oil. Stir into dry mixture, and beat with rotary beater until smooth. Add and beat soda and baking powder into batter. Bake on a moderately hot griddle (about 400 degrees). This is a slow cooking, naturally dark pancake. Bake first side until batter is bubbled in the center and the edge is dry; turn and bake until steaming all but stops. Makes six pancakes. |
