MEXICAN DELIGHT 
1 lb. ground beef
1 sm. onion, chopped
1 green pepper, chopped
4 lg. stalks celery, sliced
2 tbsp. flour
3/4 c. catsup
2 tbsp. chili powder
Salt to taste
1 lg. bag corn chips
1/2 lb. grated Cheddar cheese
1 sm. can chopped olives
1 avocado, diced
2 c. shredded lettuce
3 tomatoes, chopped

Crumble beef into large skillet, brown over medium heat. Drain excess fat. Add 1/2 cup water, onion, green pepper and celery.

Mix flour with small amount of water, stirring until blended. Add to beef mixture, stirring constantly until thickened. Stir in catsup. Add chili powder and salt. Stir well, simmer until celery is tender. Spoon onto plates over layer of corn chips. Sprinkle cheese over top, let cheese melt slightly. Top with spoonfuls of chopped olives, avocado, lettuce and tomatoes.
