MEXICAN ENCHILADAS AMERICAN
STYLE
 
1 lb. ground beef
1/2 c. 3-minute brand oats
1/2 tsp. salt
1/8 tsp. garlic powder
Dash of pepper
1 dozen tortillas
Oil for frying tortillas
2 (10 oz.) cans enchilada sauce
1 lg. onion, chopped
1 pt. creamed cottage cheese
1 c. grated Jack cheese or mild cheddar cheese

Brown the ground beef, stirring while cooking to make beef crumbly. Add the oats, salt, garlic powder and pepper and stir well. Fry the tortillas in hot oil just to soften. Dip each tortilla in enchilada sauce, then place a tablespoon each of chopped onion, ground beef mixture and cottage cheese in each tortilla. Roll up the tortilla and place in a baking dish. Spoon remaining enchilada sauce over the enchiladas and sprinkle with the grated cheese. Bake at 350 degrees for 30 minutes.
