SWEET POTATO CASSEROLE 
3 lbs. sweet potatoes
1/2 c. raisins
1/4 c. (1/2 stick) butter, melted
1 c. apple cider
2 tbsp. light brown sugar
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. vanilla
1/8 tsp. ground nutmeg

1. Butter 10" iron skillet.

2. Peel sweet potatoes. Grate; you should have about 9 cups. Combine with raisins and butter in prepared skillet. Combine cider, brown sugar, salt, cinnamon, vanilla and nutmeg in bowl; pour over potatoes. Mix thoroughly. Cover tightly with foil.

3. Bake in preheated hot oven, 400 degrees for 30 minutes. Stir potatoes. Bake, covered, 30 minutes longer. Serve from skillet or transfer to serving bowl.
