SWEET POTATO SOUFFLE 
2 eggs
2 med. baked sweet potatoes
1 1/2 c. sugar
1/2 stick butter
1/2 pkg. miniature marshmallows
1/3 c. chopped nuts
1/3 tsp. lemon flavoring
2 tbsp. flour
1/2 tsp. vanilla

Mash potatoes. Stir in butter and sugar. Mix nuts with flour. Stir into mixture. Pour into casserole dish and bake at 350 degrees for 40 minutes. Take out and place marshmallows. Cut down oven to about 200 degrees. Leave in until marshmallows are melted.
