GRANDMA'S BANANA BREAD | |
2 c. all-purpose flour 1 tsp. baking soda 1/2 c. lightly salted butter at room temp. 3/4 c. granulated sugar 2 lg. eggs 1 c. ground pecans 1 1/2 c. ripe bananas (about 3 med.) 2 tbsp. hot water Heat oven to 350 degrees F. Grease 9x5x3 inch loaf pan. Mix flour with baking soda. In a large bowl, beat butter and sugar with wooden spoon until smooth and creamy. Add eggs, one at a time, beating well after each addition. Stir in pecans and mashed bananas. Add flour mixture 1/2 cup at a time. Stir in water. Pour into pan. Bake 55-60 minutes or until cake tester inserted in center comes out clean. Remove bread form pan - put on wire cake rack. When completely cooled wrap tightly and let stand 24 hours before slicing. 10 servings. |
