GRANDMA'S BANANA BREAD | |
2 c. flour 1 tsp. baking soda 1/2 c. light salted butter (softened) 3/4 c. sugar 2 eggs 1 c. ground pecans 1 1/2 c. ripe mashed bananas 2 tbsp. hot water Preheat oven to 350, grease a 9x5x3 inch loaf pan. Mix flour with baking soda, set aside. In large bowl beat butter and sugar with wooden spoon until smooth and creamy. Add eggs one at a time, beating well after each. Stir in pecans and mashed bananas. Add flour mixture 1/2 cup at a time, beating well after each addition. Stir in water and pour into prepared pan. Bake 55 to 60 minutes or until a cake tester, inserted into center of bread comes out clean. Remove bread form pan and cool on wire rack. When completely cooled wrap tightly and let stand 24 hours before slicing. |
