CHOCO - NUT HEALTH MUFFINS | |
2 eggs (or 4 egg whites) 3/4 c. skim milk 1/2 c. peanut oil 1/3 c. honey 1 1/2 c. unbleached flour 1 c. raw wheat germ 4 tsp. baking powder 1 tsp. salt 1 c. chocolate or carob chips 1/4 c. finely chopped walnuts/pecans Preheat oven to 400 degrees. Grease 1 dozen large muffin cups. Beat eggs, stir in milk, oil and honey. Stir in remaining ingredients. Fill muffin cups 3/4 full. Bake until golden, 10-15 minutes. Remove from pan while hot. |
