Ingredients can vary, depending on what you have on hand or based on leftovers. Salsa (chunky store-bought or home-made) Tortilla strips (corn) Refried beans or browned beef or sausage or cooked chicken chunks or sauteed pepper & onions
Preheat oven to 350 degrees. Soften 6 tortillas in hot oil (about 1 minute on each side). Cut into strips.
Assemble in 2 quart baking dish: a little salsa in bottom, a layer of tortilla strips, a layer of chicken, beans or whatever, then grated cheese. Keep repeating the layers until all is used, ending with cheese. Bake about 30 minutes until cheese is melted and golden. Let sit 5 minutes before serving.
