MEXICAN CHICKEN 
1 chicken, boiled and deboned
1 pkg. taco flavored Doritos
1 can cream of mushroom soup
1 can cream of chicken soup
1 c. chopped bell pepper
1 c. chopped onion
1 c. grated Cheddar cheese
1 can Rotel tomatoes

Soak chips until limp in chicken broth; drain. Put chicken in bottom of baking dish. Cover chicken with chips. Sprinkle with onion and bell pepper. Add soups, sprinkle with cheese. Pour tomatoes over casserole. Bake uncovered for 1 hour at 350 degrees (or until bubbly).
