CHOCOLATE ECLAIRS 
1/2 c. butter
1 c. boiling water
1 c. sifted all purpose flour
1/4 tsp. salt
4 eggs

Melt butter in boiling water. Add flour and salt. Stir until mixture forms a ball. Remove from heat and cool. Add eggs one at a time; beat after each egg is added. Drop onto greased cookie sheet by heaping teaspoon. Bake at 450 degrees for 15 minutes. Reduce heat to 325 degrees and bake 225 minutes. DON'T OPEN OVEN DOOR WHILE BAKING! Remove from oven and cut open. Place in oven turned to off for 20 minutes.

FILLING:

2 pkg. vanilla instant pudding
1 3/4 c. milk
1 tsp. vanilla

Beat with mixer until thick.

ICING:

1/2 box powdered sugar
2 tbsp. cocoa
1/2 stick butter, melted
1/2 tsp. vanilla
Milk to desired texture

Fill bottom half of pastry shells with filling. Put the top of pastry on and spread with icing. Place in refrigerator, pastry will soften. These take some time, but they are worth every minute.
