PORTUGUESE SWEET RICE 
1 1/2 qt. milk
1 c. sugar
1 c. rice
2 eggs, well beaten

In a large pan, combine sugar, milk and bring to a scalding point. Add rice and lower heat to medium. Stir mixture often and cook for 60-70 minutes. Remove from burner and quickly add beaten eggs a little at a time. This makes a creamy rice; however, if a thicker rice is desired, increase amount of rice to 1 1/4 cups and add another egg.

Be careful when adding eggs so they don't congeal. Pour cooked rice into serving dishes and sprinkle with cinnamon. Makes 8 servings.
