PORK AND SWEET POTATOES 
4 lg. sweet potatoes or yams
3 lg. apples, peeled, cored, and sliced
2-3 tbsp. brown sugar
Dash of pepper
Dash of salt
4 lean pork chops
1/2 c. water

Partially bake sweet potatoes; cool and slice into 1 1/2 quart casserole with sliced apples. Sprinkle with sugar. Add pepper and salt, if desired. Brown pork chops in a non-stick skillet sprayed with Pam and place on top of apples. Add water. Bake, uncovered, until tender, about 1 1/4 hours at 325-350 degrees.
