BRAISED PORK CHOPS WITH SWEET
POTATOES
 
4 sweet potatoes
6 pork chops, cut 1 1/2 inches thick
2 tbsp. flour
Salt
Freshly ground pepper
3 tbsp. shortening

Parboil the sweet potato for 20 minutes in boiling water. Peel, cut into 1/2 inch slices and set aside. Lightly dust the chops with flour, shaking off the excess. Sprinkle with salt and pepper. Melt the shortening in the skillet and brown the chops over medium high heat for 1 minute on each side. Add the sweet potatoes to the pan, cover and cook over medium heat for 30 minutes. Serves 6.
