CHICKEN WILD RICE CASSEROLE 
4 to 5 lbs. chicken
Salt and pepper
Thyme
Bay leaf
1 large onion
1 pkg. UNCLE BEN'S® Long Grain and wild rice mixture
6 tbsp. butter
6 tbsp. flour
2 cans cream of mushroom soup
2 c. chicken stock strained from cooking chicken or 2 c. milk
3/4 lb. sharp cheese, grated
Paprika
Cubed celery

Cook, chicken with seasonings and vegetables. Saute large onion in butter until soft, but not brown. Stir in flour, soup and stock or milk. In oblong casserole layer sauce, rice, (do not use the seasoning packet) chicken, cheese, sauce, rice, chicken, sauce, cheese. Top with paprika. Bake in 350 degree oven, 30 to 40 minutes.
