PEANUT BRITTLE 
2 c. sugar
1 c. packed light brown sugar
1/2 c. light corn syrup
1/2 c. water
Pinch of salt
1/4 c. butter
1/8 tsp. baking soda
1 1/2 c. peanuts

Combine sugars, corn syrup and water in saucepan. Cook, stirring, until sugar is dissolved. Cook, without stirring, to 300 degrees on candy thermometer, or until a little of mixture dropped into cold water becomes very brittle.

Remove from heat; add salt, butter and soda and stir just to mix. Add nuts and turn into shallow greased pan. Let stand for a minute or so and then pull quite thin. When cold, break into pieces. Makes 1 1/2 lbs.
