PUMPKIN CREAM CREPES | |
Crepes: 1 cup flour 2 eggs 1/2 cup milk 1/2 cup water 1/4 tsp. salt 2 tbsp. melted butter 1 tsp. pumpkin pie spice Filling: 1 package cream cheese, room temperature 1 15 oz. can pumpkin pie filling 1/3 cup powdered sugar Crepes: Slightly melt butter in microwave, beat in eggs. Add milk and water, mix. Add salt, spice, mix. Add flour and beat until smooth. Heat griddle or pan, use butter or non stick cooking spray. Spread 1/4 cup batter very thinly over hot pan. Cook for 1 minuter and flip, cook 30-60 seconds. Should make about 8 good sized crepes. Filling: Beat cream cheese until fluffy, add pumpkin and beat on high speed until mixture is smooth.
