BUNS OR DONUTS 
4 c. water, part potato water
1 c. mashed potatoes
8 egg yolks, well beaten
1/2 c. sugar
4 tsp. salt
1/4 of lg. cake of yeast
1 c. lard (use part butter)
14 1/2 c. flour, approx.

Mix water, potatoes, sugar, salt and 2 cups flour; beat well. Add yeast, 3 cups flour; blend. Add beaten egg yolks and melted shortening; mix well. Add remaining flour to make soft dough. May be used for rolls, donuts or cinnamon rolls. If a sweeter dough is preferred, add more sugar. For donuts let rise, then roll and cut and rise again. Fry in 375 degree fat. Makes 12 dozen.
