ZUCCHINI CAKE 
3 eggs
3 c. sugar
1 c. oil
1 tsp. brown sugar
3 tsp. vanilla
2 c. chopped zucchini
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 c. raisins or dates
1 c. nuts (chopped)
1 med. can crushed pine apple, drained

Beat eggs until lemony color. Add sugars, oil and vanilla. Add zucchini. Add sifted dry ingredients. Stir in nuts, raisins and pineapple. Bake at 325 degrees for 1 hour. Makes a large cake.
