Cubed flank steak 1 tsp. oregano 1/2 c. chopped onions 2 sprigs chopped parsley 2 hard-boiled eggs, chopped Hamburger or sausage (optional) Salt and pepper Garlic salt Grated Romano cheese 1 can tomato paste Rub oil on meat. Sprinkle with garlic, salt and pepper. Mix in oregano, parsley, eggs, onions and cheese and stuff steak. Roll in long rolls and tie with string or toothpicks. Brown on all sides. Put in a skillet or casserole. Add tomato paste (thin with small amount of water), salt, pepper, garlic salt. Sprinkle cheese and cook slowly, about 2 1/2 hours at 300 degrees. Serves 4. |
