MYSTERY CAKE 
2 c. sugar
1 1/2 c. salad oil
4 eggs
2 tsp. baking soda
4 (4 1/2 oz.) jars baby food beets
2 tsp. salt
1/2 c. cocoa
2 1/2 c. flour
2 tsp. vanilla

Mix sugar, oil and eggs together thoroughly with a beater in mixing bowl. Stir together the dry ingredients and add alternately with the baby food beets. Add vanilla.

Bake in a 9x13 inch pan sprayed with Pam at 350 degrees for 45 minutes or until it tests done.

You can use 2 (15 oz.) cans of sliced beets, drained and pureed, omitting salt. Makes a darker, stronger cake. Cool thoroughly, frost with canned frosting.
