MARY VAWTER SALTED PEANUT
COOKIES
 
1 c. shortening
2 c. firmly packed brown sugar
2 eggs
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. quick-cooking oats, uncooked
1 c. crispy rice cereal
1 c. salted peanuts

Cream shortening, gradually add sugar, beating well at medium speed. Add eggs and beat well. Combine flour, baking powder, soda and salt, add to creamed mixture, mixing well. Stir in oats, cereal and peanuts. (Dough will be stiff.) Drop dough by rounded teaspoon onto lightly greased cookie sheet. Bake at 375°F for 10 to 12 minutes. Remove to rack to cool.

Makes 7 dozen.
