SPLIT PEA SOUP 
1 lb. green split peas, dried
Ham stock & water to equal 1 1/2 qt. (skim fat off top when cool)
2 whole carrots, peeled
1 sm. onion, diced or 2 tbsp. onion flakes
2 sm. celery stalks with leaves, chopped fine
2 slices ham, chopped fine
5 peppercorns

Wash and sort peas. Add all ingredients in large pot. Cook 3-4 hours on simmer, stirring frequently. Cook until thick soup. Peas may soak up a lot of water, so you may need to add more water during cooking time.

Crock pot - 4-6 hours (2 hours high, 2-4 hours low). Serve with oyster crackers, sliced cheese, kielbasa or deviled ham sandwiches. Serves 4-6.
