MARLBORO PIE 
Pastry for one crust pie
4 med. apples, coarsely chopped
2 tsp. finely shredded lemon peel
3 tbsp. lemon juice
1 c. sugar
3 tbsp. butter
4 beaten eggs
1 c. light cream
1/2 tsp. cinnamon
1 med. apple, sliced and poaches

Roll dough on floured 12 inch surface. Transfer to 9 inch pie plate. Crimp edges. Line pie shell with foil and fill with dry beans for weights. Bake in a 450 degree oven 12-15 minutes. Remove beans and foil. Set aside. Sprinkle the chopped apples with lemon peel and juice.

In saucepan combine apple mixture and sugar, cook over low heat until sugar dissolves. Simmer 10 minutes until apples are tender. Puree mixture in blender. Stir in butter until melted. Cool. Combine pureed apple mixture, eggs, cream and cinnamon. Mix well. Pour into pie shell. Cover edges with foil. Bake in 375 degree oven 25 minutes. Remove foil and bake for 25-30 minutes until knife inserted comes out clean. Just before serving arrange poached apple slices on top.
