SIMPLE COBBLER | |
1/4 cup (1/2 stick) softened butter 3/4 cup sugar, divided 1/4 tsp. vanilla 1 cup self-rising flour 1/2 cup milk 2 cans fruit (blueberries, peaches, raspberries, apricots, etc.) In bowl, cream together butter, 1/2 cup of the sugar and vanilla. Slowly stir in the self-rising flour and milk. Beat until it's a smooth batter then pour into a greased 8x8-inch pan. Spoon the fruit (your choice) over the top of the batter, juice and all. Sprinkle remaining 1/4 cup of sugar over the top of the fruit. Bake at 375°F for 45 to 50 minutes. Let it cool for 20 to 30 minutes, then serve warm. Submitted by: Amanda |
