CRANBERRY CHICKEN 
1 chicken, cut up
1 c. flour
Salt and pepper to taste
3/4 to 1 c. peanut oil
1 can (16 oz.) whole sweetened cranberries
1/4 c. peeled and chopped yellow onion
3/4 c. orange juice
1/4 tsp. cinnamon

Rinse chicken with water and pat dry with paper towels. Remove skin if desired. Mix flour, salt and pepper. Coat chicken in flour mixture and fry in peanut oil just until brown, turning once. Place browned chicken 9 x 13 inch pan. In the meantime, mix all remaining ingredients in a saucepan and bring to a boil. Pour over the chicken and cover with foil. Bake in oven at 325 degrees for 35 to 40 minutes or until the chicken is very tender.
