SWEET-SOUR MEATBALLS 
FAMILY SIZE:

1 1/2 lbs. ground beef
2/3 c. cracker crumbs
1/3 c. minced onion
1 egg
1 1/2 tsp. salt
1/4 tsp. ginger
1/4 c. milk
1 tbsp. shortening
2 tbsp. cornstarch
1/2 c. brown sugar, packed
1 (13 1/2oz.) can pineapple tidbits, drained (reserve syrup)
1/3 c. vinegar
1 tbsp. soy sauce
1/3 c. chopped green pepper

Mix meat, crumbs, onions, egg, salt, ginger and milk. Shape mixture into very small balls (less than a walnut). Melt shortening in large skillet; brown and cook meatballs. Remove meatballs; keep warm. Pour fat from skillet.

Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar and soy sauce until smooth. Pour into skillet; cook over medium heat, stirring constantly, until mixture thickens andb oils. Boil and stir 1 minute. Add meatballs, pineapple tidbits and green pepper; heat through. 6 servings. Serve with rice.

PARTY SIZE:

Use double or more of ingredients listed above. I used a little more than 3 pounds of ground meat to make about 110 tiny meatballs. I rolled them in my hand and stored them in a bowl in the refrigerator until time for cooking.

For the sauce, I made more than double, perhaps triple, for that many meatballs. I adjusted the cornstarch for my needs due to the variable quantity of the other ingredients. I used 3 cans of tidbits. I used 1 can sliced pineapple, and several ring slices of green pepper for garnish.

Due to the quantity, I used the "Dutch oven" size Corningware for the folding together of the sauce and the meatballs. In that container, it could be warmed in the microwave before serving.

I cooked 2 cups of rice and put it into a round shaped Tupperware, patted it down gently, and covered it with foil and alid to keep it warm. Doing this prepared the rice to hold shape when, platter over bowl, it is inverted into the center of serving platter.

I used a 17 inch diameter platter; mound of rice in middle; meatballs in sauce in ring around the rice; sliced pineapple on top of meatballs for garnish; rings of sweet green pepper to garnish rice and elsewhere.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I had already purchased prepared cocktail size meatballs for the planned cocktail party now turned into a dinne, so really wanted to use them (for two people it would have taken a LONG time to eat them all). I just happened to find Sweet Sour Meatball recipe and instructions for tripling the recipe. I tried it first and found it so easy and it was delgithful, I decided to use it. It has turned out so great; prepared ahead of time and now planning to warm it tomorrow for guests at 6p.
