BRAN AND PUMPKIN MUFFINS 
2 1/4 c. oat bran
1 tbsp. baking powder
2 tsp. cinnamon
2 tbsp. brown sugar substitute
1/2 tsp. nutmeg
1/2 c. canned pumpkin
3/4 c. evaporated skim milk
Cholesterol-free egg substitute to equal 2 eggs
1/4 c. raisins
1/2 c. frozen pineapple juice concentrate or 1/2 c. pineapple with juice
2 tbsp. vegetable juice

Preheat oven to 425 degrees. Combine dry ingredients in a large bowl. Mix all other ingredients in a blender. Add to the dry ingredients and stir just to mix. Line muffin pans with paper baking cups or spray with non-stick spray. Fill the cups with batter and bake for 12 to 15 minutes or until done. Do not overcook. This makes 12 muffins. Each muffin has about 120 calories.
