SHRIMP FETTUCINI 
2 lg. onions, chopped
2 ribs celery, chopped
1 lg. bell pepper, chopped
2 sticks butter
4 tbsp. flour
4 tbsp. parsley flakes
2 lbs. shrimp
1 pt. half and half
2/3 lb. Velveeta
10 oz. fettucini noodles

Saute onions, celery and pepper in butter. Add flour, cook 15 minutes, stirring often. Add parsley and shelled, deveined shrimp. Cook on medium heat, stirring often, 15 minutes. Add half and half, Velveeta, cubed in small chunks and salt and pepper to taste. Cook 30 minutes. Mix above with cooked noodles and place in greased casserole. Sprinkle with Parmesan cheese and bake at 350 degrees for 15 to 25 minutes.
