EASY CORN BREAD 
1 1/4 cups all-purpose flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup skim milk
1/4 cup vegetable oil
1 egg, beaten

Preheat oven to 400°F. Grease 8 or 9-inch square pan.

Combine dry ingredients. Stir in milk, oil and egg until moistened. Pour into pan.

Bake at 400°F for 20 to 25 minutes or until golden brown.

This was good. I didn't have baking powder on hand, but I happened to google an alternative and came up with baking soda and cream of tartar. I tried that method, and it came our perfect. I also used a glass baking dish sprayed with Pam. I placed the dish in the oven while it was preheating, in order for the cornbread to cook right.

I made this with chili the other night. I chose the recipe b/c it seemed easy and quick. Anyway, the cornbread comes out delicious. Lots of texture, just a touch of sweetness.
Very yummy with butter and super-easy to make.
I'm making some now, actually, because my roommate wanted some more! :)

I like this because it is not only delicious but also so easy. I made it with oat milk because I can't use dairy. I also used 1/4 cup oat flour and 1/4 cup whole wheat flour in place of some of the all purpose flour to add nutritional value. These are my own changes however and not necessary for the recipe which would be perfect as it is.

I substituted oat milk (homemade) for the milk and replaced 1/4 cup of the flour with oat flour, 1/4 cup with whole wheat. Oat milk works great as a milk substitute and you can make a simple oat milk by cooking 1 cup rolled oats in 5 cups water for about an hour then strain. This is great if you are lactose intolerant and still want to enjoy this delicious cornbread.

BEST cornbread I have ever ate or made by far! Don't let the simpleness fool you. I tried other from scratch cornbread recipes and they came out not so good. I made three alterations to this recipe that I would highly recommend for a fantastic perfect cornbread that would go great with chili. The three changes I did:

A. Added 1/2 cup brown sugar
B. Used 1 cup of oat flour and 1/4 cup all purpose flour
C. Added about 2 table spoons (I did not measure it out to be honest) of cinnamon in the batter to mix with the ingredients at the end...Be sure to use some type of mixer to get a good mix.

^^^ It was not too sweet but sweet enough and moist. Try it my way---you will not be disappointed :)
