SPINACH BALLS 
2 (10 oz.) pkg. frozen chopped spinach
2 c. herb stuffing mix
6 eggs
1 1/2 sticks softened butter
3/4 c. Parmesan cheese
1 med. onion, chopped fine
1 1/2 tsp. poultry season
Salt and pepper to taste

Slightly beat eggs, add remaining ingredients, mix well. Form into balls. I find its easier to handle if you refrigerate the mix first. Place on ungreased cookie sheet. Bake at 350 degrees for 20 minutes. Can half bake, freeze, and bake frozen at 350 degrees for 15 minutes.
