SPINACH BALLS 
2 pkg. frozen spinach, cooked and drained very well
2 c. Pepperidge Farm herb stuffing mix
1 lg. onion, minced
4 eggs
1/2 c. Parmesan cheese
3/4 c. butter
1/2 tsp. thyme
1 clove garlic or garlic powder

Mix all ingredients well with hands. Chill 2 hours. Roll into 1-inch balls. Freeze on cookie sheets. Place in plastic bags in freezer. Bake at 300 degrees for 30 minutes until outside is slightly crisp.
