COUS COUS 
2 tbsp. corn oil
1 whole chicken, cut in parts
1/2 c. chopped onion
3 c. water
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground ginger
1/8 tsp. cayenne pepper
2 med. turnips
4 carrots, cut into 1 inch pieces
1 med. zucchini
2 c. cooked farina or brown rice

In large skillet, heat corn oil over medium-high heat. Add chicken. Brown well on all sides, about 15 minutes, remove. Add onions; cook about 1 minute or until tender. Stir in water, salt, pepper, ginger and cayenne. Return chicken to pan. Cover; simmer 15 minutes. Add turnips and carrots; cook 15 minutes. Add zucchini; cook 10 minutes or until vegetables are tender. Serve with farina or brown rice. Makes 4 servings.
