BROCCOLI AND CHEESE CASSEROLE 
4 c. chopped broccoli (20 oz. frozen or 1 or 2 bunches fresh)
1 c. chopped celery
1 tbsp. minced onion
1 can mushroom soup
1 (2 oz.) jar pimentos (drained)
3/4 c. sour cream
1 tsp. salt
1/2 tsp. pepper
1/4 c. grated Cheddar cheese

Cook broccoli, celery and onion together until tender. Drain. Then add all remaining ingredients except grated cheese. Pour into a 2 quart casserole, sprinkle with grated Cheddar cheese and bake uncovered for 20 minutes at 350 degrees.
