SAUERKRAUT SALAD 
2 c. sauerkraut, rinsed & well drained
1/2 c. grated carrots
1 1/2 c. minced celery
1/2 c. finely chopped onion
1 1/2 c. seeded & chopped green bell pepper
1/2 c. seeded & chopped red bell pepper
1/3 c. white vinegar
1/3 c. sugar
Dash of freshly ground black pepper

Combine all ingredients. Refrigerate. Will keep 2 or 3 weeks in refrigerator.
