SAUERBRATEN 
4 lbs. of beef roast
2 qts. white vinegar
1 onion, cut in slices
10 peppercorns
3 bay leaves
3 cloves
Salt
2 1/2 tbsp. flour
2 tbsp. drippings
1/2 glass red wine
1/8 lb. bacon

Put meat into the vinegar and spices and leave it in that for 4 days, turning it a couple of times a day. After this take it out and rub with the bacon then cut the bacon in pieces and make slits in the roast and insert the bacon pieces. Heat the lard and brown the meat all around. Take out meat. Brown the flour in the pan and pour the vinegar mixture, water and salt in pot. Put in a piece of honey cake (Pfeffer Kuchen) and 1/2 tablespoon sugar and boil all. Put meat back into the liquid. Cook 2 1/2 to 3 hours turning frequently. One half hour before done, pour in the red wine. When finished place roast on a plate. Remove all grease from gravy, strain it. If it is too thick, add water. Potato dumplings or noodles are good with this roast; also bread dumplings.
