CRISP FRIED MUSHROOMS | |
1 egg white 1/2 c. buttermilk 1/3 c. unsifted flour 1/4 tsp. baking soda 1/4 tsp. salt Peanut oil 1 lb. fresh mushrooms 1 c. fine dry bread crumbs Beat egg white until soft peaks form; stir in buttermilk. Mix in flour, baking soda and salt until smooth. In a large fry pan or electric skillet, heat 1-inch oil to 400 degrees. Dip mushrooms in batter, shaking off excess; roll in bread crumbs and fry in oil until golden brown, about 2 minutes. Drain on paper towels and serve hot. |
